I'm here! I'm here! (Erin)

So sorry for the extended break! A girl gets a new job and a boyfriend and things start slipping... Not to worry! I'm back, and I am earnestly going to try to provide weekly updates.

If you want to know a whole lot about what's been going on, there's a video update at the bottom of this post. I look a MESS! But what are you going to do? If I wait until I look better or reshoot the video from a better angle that's a lot of time I don't have to spare right now. So you get what you see. :)

I do want to introduce my boyfriend Will! I am so blessed. Who knew there were still intelligent, considerate, mature men out there?! I was starting to wonder. This guy has been pure sunshine for me.



I also want to share a couple of recipes Will has introduced me to. They're my new addictions. Before he started cooking for me, I had never tried tilapia! For some reason I leaned toward salmon. I would now recommend tilapia. It has a very mild taste that is easy to like.

Will's Super Easy Tilapia
Ready? This is quick. Season your fish with Paula Deen seasoning (which you can make very easily - 1 c. salt, 1/4 c. black pepper, 1/4 c. garlic powder - mix) and cajun seasoning. Per fillet I'd say use 1 tsp. olive oil to lightly fry it in a skillet. It is so good! We usually make rice and steamed vegetables as sides.

Will's Amazing Mystery Mexican Dish
(We really don't know what the dish is called. That's the big mystery. Ha! He found the recipe through a friend, and we have never known a proper name for it.)
1 lb. lean ground beef
1 yellow squash, diced
1 zucchini, diced
chili powder and cumin to taste
--brown the ground beef with the spices then add the squash and zucchini when they meat is just browned. Cook until the vegetables are tender.
Must-have side: salsa - pile it on!
Optional sides: avocado and feta cheese
